Eggs have earned a bad reputation because they contain cholesterol, and many people have erroneously formulated that eating cholesterol equals high cholesterol equals heart disease. On the contrary, science has demonstrated that eating eggs has nothing to do with heart disease.
Cholesterol is an integral and very important part of our cell membranes, and consuming high-quality cholesterol is essential to our wellbeing. Eating high-quality cholesterol like the kind found in eggs creates large and fluffy cholesterol particles that can’t and don’t stick to our arterial lining. Instead of worrying about eggs, what we should actually worry about giving us heart disease are the sticky and dense particles created by artificial and poor quality fats.
Besides, eggs do a lot more than just offer us healthy cholesterol:
- Eggs are among the most easily digestible and nourishing foods available to us. In fact, raw egg yolks can be fully absorbed without much digestive help. (Mayonnaise and Caesar dressing are two ways we actively love raw eggs)
- Egg yolks contain the most important vitamins like B1, B2, B12 (vital for your nervous system), A, D, and Biotin. They are also rich in choline an amino acids, which are essential for your liver and nervous system.
The best eggs available are:
- Pastured Eggs— They are laid by chickens raised in green pastures in the fresh air and sunlight. These chickens eat a traditional omnivore diet full of bugs! (Sorry folks, that’s what they naturally eat).
- Organic Eggs— Organically raised chickens must be fed food that is free of pesticides, synthetic fertilizers, hormones, and antibiotics. These are your next best option if you don’t have access to pastured eggs.
- Pastured Eggs— They are laid by chickens raised in green pastures in the fresh air and sunlight. These chickens eat a traditional omnivore diet full of bugs! (Sorry folks, that’s what they naturally eat).
