White Bean Eggless Breakfast Scramble

Ingredients:

    • 2 tbs olive oil
    • 3 cloves garlic, minced
    • 1 onion, chopped
    • 8 oz sliced mushrooms
    • 2-3 cups cooked white beans
    • 1/2 tsp turmeric
    • 1/4 tsp crushed red pepper
    • 1 large tomato, chopped
    • 1 handful fresh basil, chopped
    • Salt and pepper, to taste
    • Nutritional yeast to sprinkle on top

Directions:

  1. Heat oil over medium-low heat in a large skillet. 
  2. Add garlic and cook until just golden. 
  3. Add onions, cook until translucent. 
  4. Add mushrooms, cook until softened.
  5. Add beans. 
  6. Using a fork, mash about 50% of the beans. Leave the rest intact. (This is for appearance only, you can skip the mashing if you like.) 
  7. Stir in turmeric, red pepper, tomato and basil. Salt and pepper to taste. Serve with a sprinkle of nutritional yeast on top.
