Any kind! Do what’s easy, like enjoy an organic rotisserie chicken and toss the left-over bones in a stock pot or slow cooler with water, kombu, bay leaf, splash of apple cider vinegar, onion, celery, carrot, cilantro or parsley, salt, pepper – and cook it as long as you can stand on a very low simmer. Some people do this overnight or all day.

Bones contain minerals that we need for our gut health, brain function and yes- our bones! L-Glutamine is a good example. It’s an amino acid (a protein) that helps repair and build tissue, like in our gut.

You can use any type of bones to make your broth – Experiment with alternative poultry such as duck or turkey insteaf of chicken, or more “wild” choices such as bison or venison.
