Superfood Chocolate Avocado Pudding

Ingredients:

  • 2 ripe avocados, peeled and pitted
  • 4 ripe bananas
  • 1/3 cup unsweetened organic cocoa powder
  • Stevia to taste
  • 1 tsp organic vanilla extract (non-alcoholic if sensitive)
  • Coconut cream (optional)

Directions:

  1. Add all ingredients to a food processor.
  2. Pulse for at least 2-3 minutes to completely mash avocados and bananas. The consistency should resemble a loose pudding.
  3. Use a spatula to transfer pudding to a glass bowl and let refrigerate about an hour. This will help to firm up the mixture into a pudding-like consistency.
  4. Remove from refrigerator and split in 4 small bowls.
  5. Top with whipped coconut cream (optional).
