Spaghetti Squash Primavera

  • 1 whole spaghetti squash
  • 2 tablespoons olive oil
  • 1-2 cloves crushed garlic
  • 1/4 cup diced red onions
  • 2 cups zucchini
  • 1 cup chopped mushrooms
  • 1-1/2 cup broccoli
  • Add a 1/4 cup of your favorite red sauce.

Cook a whole spaghetti squash until done. Cool and scoop out the interior. Put olive oil, crushed garlic, diced red onion into a non-stick pan on medium heat and sauté. Add zucchini, chopped mushrooms, and broccoli and sauté until tender. Add spaghetti squash and your favorite red sauce. Toss until warm.
