Sesame Crusted Salmon

  • 1 – 6 oz center-cut salmon fillets
  • 3 Tbs white un-toasted (raw) sesame seeds
  • 2 Tbs toasted sesame seed oil
  • salt and pepper
  1. Pat salmon dry with paper towels and season with salt and pepper.
  2. Rub both sides with 1 Tbs sesame oil.
  3. Pour sesame seeds onto a plate and lay salmon onto plate (flesh side down) to coat top with seeds.
  4. Heat a large skillet until hot, then add the remaining sesame oil and heat until the oil shimmers and is hot over medium heat.
  5. Place the salmon fillets in the skillet flesh/seed side down and cook without moving them until the seeds are browned and the top half of the fillets are opaque about 5 minutes.
  6. Turn the fillets and cook, without moving them, until the flesh is opaque and firm to the touch (about 125 degrees), about 5 minutes (if salmon is still not cooked through but edges are browned, you can finish baking in a 350F degree oven for a couple of minutes)
