- 1 tbsp coconut oil
- 1/2 cup frozen peas
- 1 cup steamed broccoli
- 1 cup pumpkin, diced up in 2 cm chunks
- Salt to taste
- 1 tsp cinnamon
- 1/2 cup pepitas (I used walnuts in the pic first time making this & loved the crunch!!)
- Handful of coconut flakes
- Handful or two of kale
Heat the oil in a pan. Add the pumpkin & sauté for 5-10 mins until soft but not mushy.
Add the peas & broccoli & kale & cook for 5 minutes until the peas and kale are soft. Add the cinnamon.
In a saucepan toss the pepitas and coconut together. Hear until the coconut starts to darken.
To serve place in a bowl. Sprinkle over the pepitas & coconut. Enjoy!
