Pistachio Date Truffles

Ingredients

  • 1 cup unsalted roasted pistachios
  • 2 cups pitted dates
  • 2 tsp vanilla extract
  • pinch of salt

Directions

1. Grind pistachios in a food processor. Remove to a plate.
2. Chop dates as finely as possible in the food processor.
3. Add approximately 3/4 of the pistachios, the vanilla extract and salt to the food processor and mix everything together. This will create a big sticky mass.
4. Roll the “dough” into balls about 1-inch in diameter.
5. Finish by rolling the newly made “truffles” in the reserved pistachios.
