Mashed Cauliflower

This Mashed Cauliflower recipe is an incredibly simple way to add some more nutrient­ rich veggies to your meal.

  • 1 head of cauliflower, cleaned with coarse stem removed and coarsely chopped
  • 3 Tbsp ghee (clarified butter) or butter or olive oil (or a mix of these)
  • 3­-4 garlic cloves, minced or pressed
  • Liberal sprinkling of unrefined sea salt
  • Black pepper to taste, preferably freshly ground

Put cauliflower in a large pot with 1⁄2 inch of water in the bottom.
Cover, turn heat to high, and allow to steam until quite tender (~5 minutes).
Meanwhile, heat oil or butter in small saucepan and saute garlic until light
golden brown. Cool slightly. Drain cauliflower thoroughly. Place all
ingredients in food processor and blend until very smooth.
