Make ahead Berry Good Muesli

This quick and easy recipe needs to be soaked overnight. It’s a quick throwing together of a few basic ingredients and a great sweeter start to your morning that should sustain you without a sugar crash.

Ingredients

Muesli

  • 2/3 cup quinoa flakes
  • 1 cup almond milk (or water)
  • 1 tsp lemon juice
  • 2 T chia seeds
  • 2 tsps chopped pistachio kernels, to garnish

Berries

  • 1 cup strawberries
  • 1 cup rasberries
  • pinch of ground ginger, cinnamon, cardamom
  • zest of 1/2 orange, finely grated
  • pinch of sea salt

Directions

1. Mix all ingredients for the Muesli togher in a bowl (except pistachios) and fut in fridge overnight.

2. In the morning, wash and halve the berries

3. Smash the berries withthe spices, zest and salt with a fork.

4. Spoon the berries into the muesli and sprinkle the pistachios on top.
