Date Night Chocolate Truffles

These date night chocolate truffles are a great way to satisfy a sweet craving! Brazil nuts are nutrient-dense sources of mono-unsaturated fat and have lots of selenium, a very important nutrient for healthy thyroid function.

Ingredients

  • 1 cup Brazil nuts, toasted
  • 2 Tbsp almond butter (or your favorite nut butter)
  • ½-1 tsp sea salt
  • 3 tsp raw cacao powder (or cocoa powder)
  • 9-10 dates
  • 1 tsp vanilla
  • Extra cacao or cocoa powder on a plate or wide-mouthed bowl (for rolling)
  • Optional: 15 drops stevia liquid for sweet-oriented palates

Directions

Put Brazil nuts in food processor and grind until the texture resembles coarse meal. Add all remaining ingredients (except stevia and rolling cacao) and process at least 30 seconds continuously until very well mixed and dough starts to come together. Taste and, if desired, add stevia drops for sweetness. Pulse a few more times to blend. Form 1” balls in the palm of your hand and immediately roll in extra cacao or cocoa powder. Store in refrigerator, covered. Flavors will be best after a day or two of storage.
