Chocolate Pudding

  • 2 large ripe avocados
  • 1/2 c. to 3/4 cups of unsweetened raw cacao powder to taste
  • 1 c. of unsweetened nut butter
  • Pinch or two of sea salt
  • 3 – 6 medjool dry dates (processed into paste)
  • Stevia drops to taste
  • 2 tsp. non alcoholic vanilla extract
  • Filtered water as needed
  • Soak dates in warm water for a half an hour to soften.  Discard water before blending the dates.
  • Add all ingredients except for the water into a food processor or Vitamixer and blend until creamy and smooth.
  • Add water to thin the mixture and help blend.
  • Don’t hesitate to add more cocoa powder for a richer chocolate taste.
  • Pour into individual ramekins or shallow cups.
  • Cover tightly with plastic wrap.
  • Chill overnight.

Garnish with the following:

  • Unsweetened shredded coconut
  • Unsweetened dark chocolate chips
  • Chopped nuts like pecans, walnuts
