Chia seeds are packed with fiber, omegas, potassium, and magnesium and are great for boosting energy, improving endurance, and helping regulate digestion. Here’s a healthy dessert recipe!
- 1 cup Chia seeds
- 4-5 cups coconut milk (½ regular and ½ “light” versions, both in the can)
- 1-1.5 Tbsp vanilla extract
- 1 tsp ground cinnamon
- ½-1 tsp sea salt
- Optional: 10 stevia drops
- Optional toppings: Fruit or Nuts
Put all ingredients except Chia seeds in pitcher or large bowl and whisk thoroughly to blend well. Pour mixture into mixing bowl with Chia seeds and immediately begin whisking to blend. Cover and put in refrigerator for at least an hour, ideally overnight. Add optional toppings only when serving.
