Caramelized Bananas

A plate of caramelized bananas

Crunchy on the outside, sweet and creamy on the inside, these caramelized bananas are the perfect fix for when you need a sweet fix. Serve over your favorite dairy-free ice cream or yogurt and top with some coconut flakes, granola, or chopped walnuts for a healthy, homemade dessert in minutes.

Serves 2

  • 2 Tsp coconut oil (enough to generously coat the pan)
  • 1 Tsp cinnamon
  • 2 Tsp monkfruit sugar
  • 2 Bananas, peeled and sliced into ¼ inch slices.
  1. Heat a large cast-iron pan over medium heat. 
  2. Add enough coconut oil to lightly coat the bottom. 
  3. Add cinnamon and monkfruit sugar and let heat for 1 minute. 
  4. Add sliced bananas in a single layer, with plenty of space in-between. 
  5. Let the bananas caramelize for 2-3 minutes or until deeply browned before flipping. Brown on the second side. 
  6. Remove from the pan and serve hot.
