Black Bean Salsa

  • 1-1/2 cups prepared black beans (drained)
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped cilantro
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons olive oil
  • 1 clove crushed or minced garlic
  • Cayenne and salt to taste
  • 1 Jalepeño pepper (optional)
  • (serve over grilled chicken or fish or more veggies)

In a mixing bowl combine black beans, red onion, cilantro, rice wine vinegar, olive oil, and garlic. Add cayenne and salt to taste. You may also add 1 small minced Jalepeño pepper without seeds for more zip. Mix and let sit for at least one hour to develop flavors. Serve over grilled chicken or fish.
