Preheat oven to 400 F and prepare a loaf pan by lining with parchment paper.
Add all ingredients except for optional add-ins to a blender or food processor and process on high until oats are broken down and batter is smooth and creamy. Stir in add-ins by hand.
Pour batter into prepared pan.
Optional: sprinkle additional cinnamon or coconut on top.
Bake for 20 – 30minutes,until the top is set and a toothpick inserted into the middle comes out clean. Allow to cool in pan for ~10 minutes before removing. Store in an airtight container for up to a week.
