Baked Quinoa

Total Time: 35 minutes
Serves: 1-2

Ingredients

  • 1/2 cup Quinoa
  • 1 1/3 cup water
  • 2 tablespoons ground flaxseed
  • 5 Tbsp. Applesauce
  • pinch of Sea Salt
  • 1/4 tsp. Cinnamon
  • 2 tsp chopped pecans
  • 3/4 cup apple or 1⁄2 cup berries

Directions

Boil Water then add Quinoa and simmer for 10-15 mins.

Pour into oven-safe bowl, add flaxseed, Apple Sauce, Salt, and Cinnamon and broil on low in oven for 7 mins.

Top with pecans or other nuts and apple or berries.
